I found this on another site.
Coyote Soup
Coyote Hind quarter cooking oil 2 cups red wine 3 onions, chopped 1 garlic clove salt and pepper spices 2 cabbage heads, chopped 8 potates, chopped
Cut meat into chunks and brown in oil. Add wine, onions, garlic, salt and pepper and your other favorite spices. Cook for 30 minutes. Add cabbage and potatoes. Cook until tender. Serve with hot biscuits or corn bread.

go to dollar store buy you 2 bags of cheap cleaning sponges, and one disposable pan. take them home fry up some bacon or ground beef. pour grease over the sponges. take out to your deer farm throw them everywhere. yotes will swallow dead in three days. you will then have plenty of other animals to shoot and eat.

Original recipe calls for dog - I assume coyote would work fine!
VIETNAMESE STIR FRIED DOG WITH LEMON GRASS
2 lb Dog meat, cut into Small pieces
Marinade
1 Stick fresh or 2tb dried Slices lemon grass 1 Garlic clove, large 1/2" to 1" fresh ginger - grated/finely chopped 1 tb Sugar 1 1/2 tb Tomato paste 1/2 ts Salt 1/4 ts Chilli powder 1/4 ts Ground turmuric
For Cooking
2 Cloves garlic 3 tb Vegetable oil 1 tb Fish sauce OR salt to taste 4-8 tb dog stock - beef stock works 1 medium onion - sliced
First prepare the marinade. If you are using fresh lemon grass, cut it crossways into very thin slices, starting at the bulbous bottom end andgoing up around 6". Discard the strawlike top. If you are using dried lemon grass, soak it in 4 tb of hot water for an hour.
Put the dog pieces in a bowl, add the fresh lemon grass or the drained soaked dried lemon grass(save the soaking liquid).
Peel and crush the large garlic clove, peel the ginger and grate it finely. Add the garlic, ginger, sugar, tomato paste, salt, chilli powder and turmeric to the dog. Mix, cover and set aside for 1-24 hours, in the fridge.
Peel and finely chop the two garlic cloves. Put the oil in a wok or large, lidded frying pan and set over a high heat. When it is hot, put in the garlic. Stir and fry for 30 secs or until the garlic is golden. Add the dog along with its marinade. Stir and fry for 5-6 mins or until the dog browns a little.
Add the fish sauce and either the lemon grass soaking liquid or 4 tb stock. Stir once and cover. Cook on a high heat for 5 mins. Lift the lid and stir, adding another 4 tb of stock. Cover, turn the heat to low and cook for another 5 mins. While the dog cooks, peel & dice the onions.
Turn the heat under the dog to high, remove the wok lid, add the onion and fry for 1 minute. Lift the dog out of its oil and serve.
Fine meal.

I'm sitting here looking at my old german shorthair pointer in a new light tonight!
Actually if you ever read Ambose's "Undaunted Courage" about Lewis and Clark those guys after eating elk, deer, elk, deer, horse, and elk actually liked the dog served to them by the Native Americans.

I would say make coyote tacos. Brown it in a skillet in some olive oil and wrap in a tortilla with some lettuce, tomatoes, sour cream, cheese and hot sauce! Had dog tacos in Texas by accident but were pretty good.

I think I've seen it all now.  Protein is protein! Motor oil is motor oil! Dog is a fine meal! Particularly if you are hungry. Some would say that eating the embryo of a bird is disgusting...where you most likely would say - scrambled or sunny side up! WHY would a hunter turn up his nose at the game he has just taken the life of? If you kill it....grill it. Or, utilize that cast iron wok you got as a wedding present. To each his own I guess...

coyote is especially good when deep fried in chunks along with pieces of deep fried crow, opossum and armadillo. the four meats compliment each other nicely especially when battered and fried in coon lard.

Only recipe i got fer coyote is 77gr HPBT in .223 over 24gr IMR XBR 8208 in some nicely tumbled and cleaned Lapua brass with a firmly seated CCI200 small rifle primer to seal in the flavor. Served thru a 22" 1:9 varmit contour barrel in front of a Stevens 200 action all the while sitting atop a custome bedded and custom painted stock looking thru a Leupold Mark AR eyepiece. This recipe best served at 3150fps and actually makes a nice "jelly" when placed just slightly above and behind the front shoulder...

a lot of the predator masters guys i hunt with say it is some of the best meat you can eat. They pressure cook and add minced onion, garlic, white pepper,cayenne and cumin. mix with bread crumbs and roll in panco. brown in duck fat. say its incredible I shot one with my crossbow a while back.I had to put the arrow in the back of the truck because it stunks so bad!I cant imagine what it would smell like cooking!

Why would anybody want to eat a nasty @** frikkin coyote when their is alot better meat out there to eat?Bout like eatin a carp or shad when there is crappie and bream to eat. A buzzard wont even eat a coyote they will just lay there and rot. It would be different if a man was starvin but if a man is usin a computer I assume he is not starvin. Just shoot em and chunk em in the nearest ditch.

It used to be considered a delicacy in old word cooking. I saw an old French recipe that called for you to remove the head and tails and set aside. Cook the middle of the fish in some complicated way and then "reconstruct" the scales using truffles, put the head and tail back in place. The amount of truffles alone would cost $1000 today.

boil yote for 1 hour. throw pot and yote away and go to golden corral for a good meal
I might rather have Coyote than that 50 ft long infestation of a petri-dish they serve food on at Golden Corral. Bafr

I haven't been in a Golden Corral in probably 20 years, but you're probably right. Nothing like low quality food, sitting under heat lamps for hours and picked over by the penny slots crowd.

Take out the backstraps.
Marinate in Dales, or marinade of your choice for about 3 hours.
Then cook it on a grill (or oven) on a wet hickory grilling plank for about 20 minutes.
Let cool for aboout 5 minutes.
Throw away the coyote and eat the grilling plank.
Enjoy!

I've heard the backstrap is delicious battered in 1/3 flour, 1/3 Aunt Jemimah pancake mix, and 1/3 yellow corn meal, then deep fried.
But then most anything is good fried, especially if you're hungry!

We used to give ours away to a trapper, some he'd skin and sell others he'd skin and use the pelt himself.
I would only eat one if my life delended on it, other wise now I'd leave it lay and hope another 'yote came in to take a taste.

Did u ever eat that yote Poser?
I know a guy from Michigan that makes sloppy joes with coyotes. I think he makes em in a crockpot. I ate some BBQ out of his crockpot a year or two and I got a feeling...
