Interesting perspective. I like that quality butchers are making a comeback, and will one day learn the art of butchering.
Thomas Meats & Seafood is a similar joint in Collierville that I need to frequent more often. The biggest step off that cliff, though, is swallowing the pricer cost than grocery store meat.
BTW, have you had any recent dealings with Charlie's Meat Market?

I found Charlies Meat Market about 6 months ago and have been impressed. I haven't ordered anything in bulk but have picked up Steaks and Thick Porkchops. No complaints.

The last few things I've gotten from there have been questionable. They were tough and had a strange taste. I don't trust the bacon wrapped "filets" anymore. I have my doubts that they're of the tenderloin.
