I know deer will eat privet as the two does I killed this year were both munching on it. But how high is it on their list?

Quite low as a general rule. But they will eat it.

It's always difficult to describe how food preferences work, other than to say, given free choice, what will deer eat most of the time. Even when high-quality foods are available, deer will browse and nip on just about anything. During a good acorn year, I've still watched deer browse the tips of cedar branches and even eat dead leaves off the ground.

My theory is deer prefer a diverse diet over any particular "preferred" food item. They may mostly eat the "preferred" items, but they can be quick to munch on something else that becomes available, even many "non-preferred" items.

I like shrimp. It's one of my favorite food items.
You can broil it, you can boil it, you can fry it, you can steam it, you can grill it, you can bake it, you can saute it ----- but I don't won't it every meal.

there are a few oaks nearby but no concentrated deer sign around them that I have found so far. Both does I shot were browsing their way through the privet slowly, and so were their fawns. They weren't stopping to heavily feed but were eating the whole time as they moved through the woods. seemed they really liked that privet. After all that is probably the dominant plant in that neck of woods... way too much of it.

And that is often times when you see the most browsing on privet--when it is the primary plant available. Go down into north GA, especially around the Chickamuaga Battlefield, and you will see deer pounding privet. But that's because it is the dominant plant available.

doubt I would have to go to north GA. Sure there are lots of other plants around here but I swear the whole understory is made of privet and honeysuckle anywhere near the creeks and rivers.

Privet is a nasty exotic that can really take over an understory.

How do you kill it? I am starting to see some on my place. I want to wipe it out before it gets bad... total veg killer?

I would try Roundup first. If that doesn't work, move to some of the harder-core herbicides like Garlon
