Say you have adequate food, cover, & water...What is a good rule of thumb for # of deer per acre and how many bucks vs. does?

Unfortunately, there are no good rules of thumb about appropriate deer densities. Everything comes down to two factors: 1) how is the current deer density relating to the available food resources; and 2) what deer density to food-availability ratio do the hunters/managers want? The higher the deer density in relation to food availability, generally, the higher the deer sightings by hunters, but the lower the quality (size: both in body and antler) of the individual deer.
As for sex ratio, Nature has designed deer herds to function best at adult sex ratios of 1.2 to 1.5 adult does per adult buck. Although deer are born at a ratio slightly favoring males, higher natural mortality of males and shorter lifespans of males means there will usually be slightly more adult females in the population than adult males.
