I've never heard it called anything but the heel and it's the best part of a loaf of bread! Take two heels, slab of balogna, some mustard, slice of mater, maybe a big slice of vadalia and mash it flat....let the games begin!!!! Cowboy Porterhouse!

I never eat it, but I call it the heel. I don't throw the first one away when I open the bag. I just move it every time I get a piece of bread. I don't know why. Character flaw I suppose...

I will rephrase my earlier answer, If it is a pre sliced loaf - it is the end slice. If it is a bakery loaf - it is the heel.
I generally take the two end cuts, turn them crust side in and make a grilled cheese samich or PBJ.

It keeps the next piece of bread from drying out. My wife had to explain that to me.
