Dandelions roots and flower's and leaves, Persimmon, Acorns, Hickory Nuts, Blackberries,Pine Needle Tea(Full of Vitamin C), Henbit, Chickweed, Plantain, Wild Onion, Clover. And many more

check the university. I know UTK offers some wild edibles courses through the smokey mtn. field school.
