Roasted wild turkey wings, collard greens and cornbread.



Got the greens in duck stock going and then moved them to the side with coals underneath and on the lid. These cooked for about 3 hours.

Next was the cornbread. I needed a high temp, so I did these over the fire with colas on the kid as well. Cornbread over the fire is trickey.



Then I took some Wild Turkey wings (skin on) out of a brine and braised them in turkey stock for about an hour. I then removed them from the stock a put a rub of Allspice, cinnamon and nutmeg on them and roasted for about 10 minutes while basting with the stock.

Cornbread was a little burnt on the bottom -going to have experiment with that some more. It's tough to do over a open fire.

Saturday night, I reheated the leftover greens, made another loaf of cornbread, and then fried some venison steaks, deglazed the pan and made white gravy:

You're my freaking hero, man. Geez. How do you even have time to do all this? You must have put and are putting a lot of prep work time in up front for such a smorgasbord.
How about the turkey wings? Did they turn out good - not tough?
I'm diggin' the steak and gravy too.

Not too bad. With the dutch oven, put things that go can slow and low on coals in the afternoon and then you can just deal with the entree at night. On Saturday, we hunted until 2, did some scouting and then started cooking about 5. I like that schedule for Saturday hunting. -crack a beer about 4, in bed about 8 and get ~7 hours of sleep for Sunday. With the exception of Friday evening, I'm not really hunting weekend nights right now as having the afternoons to cook, eat, relax just makes it more fun. I try to get a evening hunt or two in during the week.

The wings came out good. You can pretty much braise any cut into submission, though it can take a while.

Dude, That all looks great, you could cook in my camp anytime. It is always good to have a good cook, and people that aren't lazy in a camp.
