Well I thought I would take a chance so I picked up 4 apple trees and 2 pear trees and planted then two weeks ago.
As of today the deer (I assume) have eaten most of the leaves and broken several branches.
I hope they will survive. My question is:
What should I have done different or what can I do now?

You have to cage them. Get some welded wire or something similar and make a cage around the tree to where the deer cant reach the foliage or only can reach the outermost foliage. Stake in your wire with conduit, rebar, t posts, something like that. I eventually prune mine to where the first branch is 5 feet or so up. I have to be concerned with bears too though so my fencing has to be heavier duty. I even leave sharp tips on the top of welded wire to stick any deer or bear trying to reach over.

Not to late to cage. I would cage and go a few inches below the broken branches and snip the damage off.

Yup, I learned that lesson the hard way last year - deer didn't eat mine, but a buck decided it would be a good idea to use my new tree to help discard his velvet. Tree didn't make it 
This year, pounded t-posts and ran chicken wire - no deer's getting to them this time
