how do yall make it ? i was making some today with dales and thought about trying some with only dry seasoning such as black pepper ect ...

I use ground venison and flavor it with a mixture of soy sauce, worchestershire, liquid smoke, salt/pepper, ground cayenne and garlic.

1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 tablespoon garlic powder
1 tablespoon onion salt
1 tablespoon black pepper
1 teaspoon cayenne pepper
1 teaspoon liquid smoke

Cut you meat 1/4 inch thick. Make sure there is no silver skin or fat.

Mix all ingredients together in a bowl and add sliced meat and mix thoroughly.

This mix will do 2 pounds of meat.

Cover and let sit in fridge overnight, then dehydrate until the strips will crack without breaking when bent.

You can adjust the cayenne pepper to taste. As written, it is not very spicy.

You can do ground meat with the above recipe, but it will only do 1 pound. Follow all the directions the same, but before dehydrating, cover a cookie sheet with wax paper, place the ground meat on the wax paper and cover with another piece of wax paper. Roll this until it is 1/4 inch thick and cut into strips with a wet butter knife. Then dehydrate the strips or place in a 200 degree oven for about 1.5 to 2 hours.
