Breast dove meat, place small piece of pineapple between the halves, wrap with bacon, then pin with a toothpick. Grill to desired done-ness. Enjoy.
Dove can also be marinated in apple juice for a few hours prior to preparing.

My wife is from Canada and this is how she prepared a couple of Hungarian partridges I shot when visiting her folks.
Excellent recipe. The enzymes from the pineapple juice work on the dove and the bacon gives it a little flavor as well as some fat.

Try marinating dove breast halves in Italian dressing, soy sauce,& white wine, then wrap each half in bacon, skewer & grill. Melt-in-your-mouth delicious!

I know a lot of people do the Italian dressing thing... never been my thing. I prefer to whip up something else myself, or try something new.
