Previously, I've cut each side off the breast bone. Is there a simple way to remove the bone so you have a 2-sided boneless dove breast? The biggest issue I see is not keeping the little "nugget" underneath the main muscle.

I prefer to remove the meat from the bone with my teeth after it is wrapped in bacon and slowly smoked for about an hour.

I'm interested in trying new stuff. That's the way I've done for years. Now, I want to take boneless breast meat and do other stuff with it.

Did our very first doves yesterday. I put my 23 yr old son on filet duty. Gave him a knife and showed him how to peel the meat off both sides of the breastbone.
Then we took those boneless nuggets, smeared a dollop of cream cheese on em, laid a pickled jalapeno ring on it, wrapped it in thin bacon and toothpicked it all together.
Hot grilled it til the bacon was good and crispy. Next thing you know, plate was empty, and everyone denied eating more than their fair share. (But you could tell we were all lyin'!)

That's the only way I've ever cooked dove.....one I have now was obliterated enough that the meat came off the bone. But it came off without the little "nugget", and I'd like to find a way to get that to come off as well.
