Pluck and grill whole after basting with bacon grease. Sprinkle with salt, pepper, and paprika.

Ive always just taken a dove breast, wrapped it in bacon with a toothpick on it on the grill for a few minutes. Precook the bacon for a few minutes because dove meat doesn't take any time to get done and the bacon will take longer.
