I was at a cookout the other night and the guy tending the grill was too drunk to be doing his job and we ended up with a well done pork loin on our hands. In order to make a dry hunk of meat palatable, I told the guy to go away and I took my Havalon knife and cut the tenderloin into razor thin slices, I'm talking prosciutto thin, and then added a little Musky dine jelly to each slice -worked pretty well, given the circumstances. Nothing worse then a thick slice of dry meat.

Oh, and the guy who burned the loin was from KY.... and was motor-mouthing about how great baiting is while his meat burned.

Hopefully it gets here before my elk hunt next week. I'm going to go ahead and sharpen my knives just in case.

Dude! Awesome find. For the price of the knife you get the magazine. Probably right though, the knife will make it before next season.

I've used the piranta for a couple of years now. The biggest problem I have with them is breaking the blades. You can't put very much pressure on them. It is the sharpest knife I've ever owned.

I have broken a couple of blades, too. The key is learning to change your technique. Having used conventional knives up until this point, I was used to certain motions, pressure and results by muscling and even twisting through sinew, joints, etc. Old habits die hard, but you really have to learn how to finess your way through connective tissues and accept the fact that the blade will not handle twisting motions. That being said, you can pretty much think of the blades as sticks of chewing gum anyway. With that kind of surgical sharpness, breaking a few blades is a reasonable tradeoff.

One thing that I really like about the sharpness of the blades is that the edge still has a certain "grabbing" quality to it. It is razor sharp, yet not bore smooth -you can feel the edge "grab" your skin when you put your finger to it. My sharpest conventional knives always end up with a very smooth edge, either from ceramic sticks or a leather strop.
