What do you guys do with them when you have a LOT of them. I have 2 plants I have almost a half bushel basket full of these things now. I would like to make hot sauce with them but all the recipes I see just call for 10 to 15 peppers is a whole batch of hot sause. It looks like most people put a lot of carrots in to to help dilute the heat. If I make the hot sauce I will have to multiply the recipe by 100X to use all of these peppers up.

I would make some hot sauce for sure. I would also make some salsa with some of it and I would also smoke some of them whole and then freeze them. Anytime you make Mexican, you can thaw 1 or two out. Smoking them will chill out the heat a good bit and you can just eat them whole or cut them into pieces to put in your Mexican dishes.

One dry ounce of peppers(I like to de-seed!)to one fluid ounce vinegar, cook@low boil 5 minutes, puree then into canning jar. I do it in batches of 8oz or a pound; match the size of batch to your resources.

I hear that using liquefied peppers, diluted in water, is a great insect spray for your garden.

So the only suggestions I got so far is dry them or make bug spray. I don't have a bug problem and I think if I dry them I will have enought for 10 yrs. Any more suggestions?

Make a mango habanero or pineapple habanero sauce for hot wings.

With the Habanero's I Cut them in half, remove the seeds and freeze them. I always end up with too many even after giving them away. It doesn't take much pepper to spice up food so I started planting less each year. I am up to my neck in Jalepenos this time. I grind them up frozen and add them while cooking when I want to spice it up.
