I have to cook up a bunch of catfish Sunday. The batter I usually buy I can no longer find. Anyone have any good recipes for a batter?

Do you mean a "wet" batter or are you just referring to the coating?
If I'm frying catfish, I like to pat'em dry with a paper towel and use a dry mix, ie Andy's fish mix, or House Autry seafood breader.Put the breader in a gallon ziploc and throw the fish in there and shake the bag to evenly coat. Me personally, I don't like a batter on fish, to me it kinda takes away from the flavor of the fish. If I want batter on fish, I'll go to long john silvers or capt D's

I agree with rukiddin. I don't batter my fish. Pat them dry and put them in a bag with cornmeal, onion powder and salt to taste. I use white corn meal. If you prefer yellow nothing wrong with that.

Egg wash, plain old flower with salt'n'pepper, and pan fry in butter......Mmmmmmmmmm!

If ya wanna try something a little different, try adding just a smiggin of pancake mix to the flower....don't laugh, it's good!

yep.

yep yep and i roll the fish in mustard before i roll them in meal it really makes them taste better.
