I agree. Those work great. Smith makes good products for sharpening. I have recently become a fan of this Smith's 3 in 1 combo

It small, handy and does the job quick. This is really more of a field sharpener/ blade maintenance tool. If you knives are dull, there's sno substitute for a Arkansas stone. $20

good point. the ceramics are NOT for initial sharpening but more for edge maintenance. 4 or 5 strokes on each side and 8 or 10 on a leather and you have a razor.

I got an email a while back that showed a fella sharpening his knife on the bottom of a coffee cup. Try that and let us know if it works.

This is the one I have today and I will not use anything else on my Wusthof and Henckels knives. They creat a different kind of edge that stays razor sharp far longer than regular sharpners. I used to have the 2 step sharper but got the 3 step a couple years ago.

http://www.chefscatalog.com/product/91010-chefschoice-120-knife-sharpener.aspx

• Stage 1 sharpens edge and prepares it for subsequent steeling using 100% diamond abrasives
• Stage 2 uses super hardened miniature steel and precision guides to develop a shaving sharp edge with ultra-sharp microscopic serrations that provide a "bite" superior to professionally steeled edges
• Stage 3 polishes using a patented, flexible abrasive disk in combination with precision guides that create a smooth, ultra-sharp fine edge

If you don't want to spend the money on a electric sharpener you can get the same thing in a manual sharper for less money. I have one of these too and take this one camping.

I like the Warthog V-Sharp ($100). I've used one for years in my house on Wusthof kitchen knives, pocket knives, & hunting knives. I recently bought the smaller, lighter Xtreme Edge model ($70) for my cabin. It works just as well as the older one, and weighs very little. It would be a good portable model.

Smiths Diamond Kit. Easy to use, quick, clamp and rods keep the knife at a consistent angle. Think they go for around $30 at Lowes.
