The 308 has less recoil with a 150g bullet than the 270 with a 130 bullet. The 270 will shoot flatter than the 308.Ammo availibility is good for both rounds.........I guess it's mainly a matter of personal preference.
As far the 7mm goes,IMO it's a great round but it's better suited for hunting out west where longer shots might be needed.

It isn't my money you are spending but if it were me I would take it down a notch in recoil and go with a .243.
Nothing goes far heart-shot with any of those calibers.

I would (and did) get a 270 for my first deer rifle, because it's more versatile. (I mean it's just as effective as the 308 for short (250 and closer) ranges but flatter shooting for longer ranges. If I wanted more than one deer rifle, the 308 would be an excellent gun to set up for specific situations.
For example, I have a light, short barrelled 260 set up with a lowpower scope for treestand and woods stalking, and a 270 set up with a higher-powered scope for sitting over power lines and larger food plots and fields.

Both .270/.308 are great for whitetail. I've killed deer with both, the deer or I couldn't tell the difference. I have noticed the deer fall quicker with the .308.
