Jon, this recipe is extrememly simple - it had to be to cook so much chicken during the benefits. However, it's hard to quantify amount of ingredients for a family of four.
Here's what I did for the crew:
Ingredients:
6 lbs. boneless, skinless chicken chest 1/2 gallon butter milk 1 dozen eggs Cooking oil (peanut is best)
1 1/4 pound SELF RISING flour. (Usually AP is the choice, but the old ladies back in the day would have none of it...said self rising 'stuck' better and got worked in good)
1 Tbsp cayenne pepper (to start, after 1st batch you can adjust) 1 Tsp paprika 2 Tbsp garlic powder Salt/Pepper to taste
Directions:
In a large pot, heat cooking oil to around 350 degrees
Separate eggs, putting whites in large mixing bowl (or two) Pour milk in bowl and mix with egg whites Place all chicken in bowl(s) and marinate for at least 4 hours
Mix all dry ingredients together - I use a gallon freezer bag, but the ladies would not. They used a bowl saying the chicken got coated better when they used their hands.
Remove chicken from buttermilk/egg mixture, shake excess off, and coat with dry ingredients.
Place coated chicken into oil and fry until golden brown.
This is just a guideline - you can adjust ingredient amounts as you see fit. It's not gradma's, but it gets the job done...course she used butter milk she made and cooked with lard in 100 year old cast iron!
Don't just throw the egg yolks away...you can save them in the fridge. Or, if the bossman has a couple of hungry dogs - they'll enjoy the treat
