I picked up two pork shoulders this morning at the farmer's market. I usually use hickory, but may try some oak this time.

i use oak and i have little pieces of apple i throw in it. as for the water pan, ill mix a little bit of apple juice or orange in with it to hold even better, sounds nuts but its very good

I never got to like the favor of oak smoke, some people do and that's all good. It helps to have different favors. My father in law pruned his orchard trees and piled up the drops per my request. Peach,apple and some Chinese chestnut. I'm a little hesitant about the chestnut though. I will say that it has in interesting aroma. Not sure what it would translate to meat.

Any fruit wood is good and I also use pecan but I've never tried chestnut.
