I hunt all three weapons always scout, and get out about 45 days from opening bow to close of deer season (January). I mostly go on the weekend though, because i work M-F.

That's a lot of hunting for being restricted to weekend. That meets my definition of Hardcore.

I fall into the top two and would love to fall into last but just cant seem to pay the bills if I lay out and hunt lol

Definitions:
ODers (f and d students): 12 pack of beer and, preferably, a shooting house. Shoot the first deer you see, hopefully a buck (any buck). Maybe you eat it, maybe you don't. Maybe you even put it in your freezer and end up throwing it away later in the year. Hunting this way is a perennial tradition.
Average Hunter (C and B students): Hunts a few to several times during the season, does very little if any scouting with the exception of hanging a few stands, generally in the same spot year after year. Likes field edges, doesn't hunt in inclement weather unless there is a shooting house available. Doesn't like to venture far from their vehicle. Hunt is a hobby. Tends to eat what they harvest.
[Sub category]Motivated Short Cutters (C- students, who fancy themselves as A students): Are enthusiastic about hunting, spend thousands of dollars on it each season, but only hunt 5-15 days out of the season, most or all of which is on a high dollar ranch where they bag a annual wall hanger. Likes to brag a lot. -may or may not eat their $3,000 trophy. -has no interest in shooting does or scrub bucks. Will throw a fit if they go hunting and don't see a deer (afterall, that was a $500 day!)
HC (A Students): Scouts intensely, not deterred by weather, hunts the full season, arrives early, stays late, all day sits when warranted, hunts as much as their schedule permits (which is often not near as much as they would like too). When they hunt, its 100% dedication and perseverance. -Perpetually motivated by hunting, always learning and adapting, and inspired to do so. Always eat what they harvest, shares what they don't need. By this I would be HC hunter.

I don't necessarily think its "fair" to limit the categorization of "Hardcore" to people who hunt full time. If you're working 40 hours a week, possibly juggling a family AND hunting 40+ days of the year, I'd say that's equally hardcore.
Hardcore is more of a mindset, passion and willingness to go beyond normalcy. While it would be difficult to label someone who only hunts 4 days a season as such, you don't have to hunt 100+ days either.
