I'd like to try processing one of my own deer this season. I have been looking at videos to buy, but there are a bunch out there and it is hard to figure out what is a good one. I'd like a pretty comprehesive one that covers step by step the cuts, tools, packaging, keeping things sanitary, hanging, aging, trimming for ginding, etc

Any recommendations of ones you have been happy with, or ones you have found lacking and I should avoid spending money on?

I highly recommend the Outdoor Edge "Deer Processing Volume 1".

I've got a few different DVD's on the subject, but the best (and cheapest) is from the Kentucky Dept of Fish and Wildlife. It's called "Kentucky Afield, Deer Processing...From the Field to the Freezer". It was done with a guy from KY Dept of Fish and Wildlife and another guy who is a butcher. He goes over every little detail, including on why not to buy expensive equipment to process the deer. He uses stuff he got at WalMart.
The DVD cost something like $12.
Go to the Kentucky Dept of Fish and Wildlife to order it.
