I would suggest Royal Blue (now called North Cumberland WMA). It's located about 30 miles north of K-town on I-75. It's open with the statewide seasons. Deer densities are low overall BUT there are pockets of higher densities within the area if you can read and interpret the habitat. There are some really nice bucks in there as well. It is a HUGE WMA and you could never cover it all in a lifetime. Start your scouting efforts with Google Earth. Use it to locate old re-claimed strip mines. Put feet on the ground and do some squirrel hunting there between now and the opener. You will find some places to hunt that you will be satisfied with.
Catoosa has an open bow hunt in mid-October. It is about 1 hour west of Knoxville off I-40 in Morgan/Cumberland Counties.
Mt. Roosevelt is near Catoosa and is open with statewide seasons.
Get a hunting guide and study it. It will have the info you're looking for. I believe you will find better hunting north and/or west of Knoxville than south or east; some on here may disagree however. If you are a good hunter, then any of the above WMA's will provide more than ample opportunities!
Good Luck and have fun!
