I'm sure that this has been discussed before, but thought I would bring it up since I'm a newbie. For all of you "old pros" out there, what is the one characteristic you look for in determining the age of a deer (antlers, shoulders, neck size, etc.)? In other words, what's the first thing you look at to determine age?

Bsk has this one! I have learned from him and others that it has to do with the belly, hams and the front brisket...top of back line also. I have noted that in pics of older class deer the swagger of the outward turned feet as they walk is another indicator of age.

my question is how do you know if you're right or not? If you dont take it to someone to look at the jaw bone you will never know if the way you are judging is correct.

That's correct, and why you need to follow up with every deer killed and have tooth-wear aged.
It can be a great learning experience to compare what you age you gave a buck from field-judging and what his age is based on tooth-wear.
