I always cook my venison about half as long as I would beef.

over cooked venison is useless to me , but perfectly cooked venison is great.

you'd be surprised at how much fatser venison cooks with the less amount of fat in it.....plus, most people cut venison alot thinner than other meats....

one thing that I would never do is cook venison or any other meat for the first time and feed VIPs........haha

from my limited cooking experience ;\) the thinner the meat the less carry over cooking will happen,the bigger/thicker the roast/cut the longer it will hold in the heat transferring it to the center,i would also stick with a proven recipe for a big dinner,there's a time for testing & a time for putting what you have learned onto the table ,mike243

i love introducing people to venison. I'ma workin on a pickled heart recipee that'll put the foie gras crowd on their keesters. gotta love fancy people thinkin they're fancy. reckon i'm fancy...

Don't eat antlers, but I do eat beef. Antlers are the prize, good meat would be a bonus.
