Between myself and close family, we eat about three deer annually. ALL the deer we kill are processed and eaten, just not necessarily all by us.
I haven't purchased any ground beef from the grocery in probably over 20 years. But still enjoy an occasional beef steak and other wild game & fish, i.e. not going to just eat venison.
And I have little desire to drag out much more than three deer annually, never mind the doe limit where I hunt is 3 a day. There is a practical limit that supersedes the legal limit.
I do usually give away a deer or two a year, sometimes several (I'm not the only person in the family putting deer in the freezer) ---- but after I've got about 3 deer at the processor, I quickly become more interested in just doing some more hunting, instead of more dragging and forfeiting hunting time for processing time. Heck, once the freezer is full and the rut's over, I even find other things to do regardless of how much longer the deer season is open.

I like backstraps and inner loins for steaks and certain cuts of the hams for jerkey. The rest I grind. It stays in the freezer at the in laws with the rest of our meat.
Later on I will thaw the ground meat and make sausage and what not. I don't usually fool with the shoulders or the neck (coyote bait).

we normally eat three deer a year and the last two years we have ran out before deer season arrived due to my kids getting older and eating more. Then if I have people ask me to "get them a deer" then I will try to kill one for them, but if I don't need the deer and have no one to give it to then I don't kill them.

I dont remember the last time I bought a beef roast or a pork roast. Deer meat goes pretty fast but I cant even give away all the pork meat in the freezer.

I give away 90% of the deer I kill, I will usually shoot one doe for my freezer and the rest I give away. Venison is fine, but I got pretty tired of it when I was working depredation permits and blistering does to reduce herd numbers. There were several years, 5 or so, that I ate deer meat 5 nights a week. It got a little old.
