two cups buttermilk.
two eggs
beat the bejeebers out of those two.
soak fish 20 minutes
shake in half sack corn meal and two cups of flour well seasoned.

Slice Vidalias for onion rings and soak in the same mixture and shake in the same batter.

Slice maters and taters.

Call me when nearly done.

This two hour catch fed several folks and that's just an estimate. The young guy is 71.

The bast part was I convinced scope eye to clean ALL of them and then give me enought for me and the wife.

Well by golly, I'll just throw this on ya. In Louisiana they are called chiquapins and I have no idea why. Their beds can be spotted in two ways. First in mud, you can smell them. In clearer water, just look for a bunch of shells on the bottom-hence the term shellcracker. They tend to bed at different times that bream...at least that is my experience. I think they bed a tad earlier. In LA we use to time their bedding with the hatch of pecan worms. They also prefer red wigglers to crickets.

They are superb eating and fillet beautifully.

And that is all I know. Ask Tubbs for more info.

Oh...you can catch them on a small black gnat fly, too.

I did think that was a crappie! And in my area some people call crappie "specs"...either way they are all good eating.

Well Coach, add this to your repretoire. In LA, crappie or specs are called sac a lait-French for bag of milk. Also called white perch sometimes.
